GREAT SOURCE OF: FIBER VITAMIN C POTASSIAM MAGNESIUM

– 250 g Tamarind (soaked and deseeded) – 250 g Jaggary / sugar (or replace them with dates & honey) – 1⁄2 tsp salt/ black salt – 1⁄4 tsp chaat masala – 1⁄4 tsp chili powder or chili flake – 1⁄4 tsp ginger powder – 1⁄4 tsp roasted cumin seed powder

In a large bowl soak tamarind in 4 cups boiling water for 30 minutes.Once soaked,using your fingers,squeeze and squish to seperate pulp from seeds and fiber.Use a cup of more water to squeeze  out maximum pulp from tamarind fiber -Now strain the pulp using a colander place over an other bowl.Press down using spatualla or back of the spoon.You will be left with seeds and fibers,waste them.OR You can use store bought ready to use tamarind pulp.

Step 1

Add strained pulp in a pan and put it on heat.Bring it to boil then add jaggery / sugar and mix until dissolved,then add spices. Bring the mixture to a boil, then reduce heat and simmer until it thickens to your desired consistency.

Step 2

Let the chutney cool completely then store in airtight glass container or bottle in refrigerator up to a month.

Serve this tangy and sweet tamarind chutney with your favorite snacks, chaats,dahi bhallas, kebabs or roast.
