Slice the zucchin:
Wash and dry the zucchinis. Slice them into rounds about 1/4 inch thick. You can also get creative with your cuts, like round, Julien, zucchini sticks or even spiralized noodles.

Make the breading:
 In a shallow bowl, whisk together the flour, cornstarch, paprika, garlic powder, salt, and pepper. In another bowl, combine the panko breadcrumbs with Parmesan cheese (if using).

Set up the breading station
Prepare three shallow bowls for your breading station. In the first bowl, place the flour mixture. In the second, whisk the egg. In the third, add the panko-Parmesan mixture.

Bread the zucchini:
Dip each zucchini slice first in the flour mixture, then the egg, and finally, the panko mixture, ensuring they're evenly coated.

Cook to perfection:
Pre heat the air fryer at 204C. Arrange the chips in air fryer basket leaving space between them. Air fry the zucchini chips for 10-15 minutes, flipping halfway through cooking for even browning. They're ready when golden brown and crispy. -
