  1. Prepare the glasses:

    Rub the lemon wedge around the edge of the glass to create a thin layer of juice where the rim mixture will stick.

    Combine kosher salt and lemon zest in a plate. Gently press the moistened rim of the glass into the salt on the plate. Twist the glass slightly to ensure an even coating.
