Add Tomatoes and Yogurt:

1/2cup whipped yogurt
1/2cup light olive oil or a neutral oil
Powdered Spices:
1 1/2teaspoon roasted cumin powder
1teaspoon red chili powder (adjust)
1teaspoon roasted coriander powder
1/2teaspoon kashmiri red chili powder
1/2teaspoon turmeric powder
1teaspoon garam masala
1 1/2teaspoon salt (adjust)
Garnish:
2tbsp. butter
1/2teaspoon dry fenugreek leaves
1/2teaspoon Nigella seeds or Kalonji
2tbsp fresh cilantro
1tbsp fresh chopped ginger

Heat the Oil:
Use a medium, heavy-bottomed pan and heat some oil over medium-low heat.
Sauté finely chopped onion until light golden. Add chicken pieces and sauté for 2 minutes or until they change color.
Add Aromatics:
Stir in minced ginger and garlic. Sauté for 30 seconds, ensuring they don’t burn.
Toast the Spices:
Sprinkle in all the powdered spices, stirring well. Let them roast for about a minute to release their flavors.
