Steps to make homemade Jamaican Sweet & Sour chicken:

  1. Marinate Chicken:

    Toss the chicken pieces with spices (salt, pepper, garlic powder, paprika, chili powder, onion powder, and Sazón Goya).

    Transfer the seasoned chicken into a zip-lock bag and place it in the refrigerator for at least 2 hours or up to overnight to marinate.

    Do not add the egg yet; we will add it at the time of frying.

     

  2. Prepare flour mixture:

    In a large bowl, combine all-purpose flour, salt, pepper, Sazón Goya, and paprika. Mix well to ensure the ingredients are thoroughly combined, then set aside.

  3. Fry Chicken:
    • Heat the oil to 350°F (175°C) in a large pan for frying.
    • Place the marinated chicken in a large bowl, add one egg, and mix until well combined. Coat the chicken pieces one by one in the flour mixture.
    • Once coated, drop the chicken pieces into the hot oil and fry on medium flame until they are nice and golden.
  4. Prepare Sweet and Sour Sauce:

     

    In a saucepan, combine pineapple juice, rice vinegar, ketchup, soy sauce, and sugar. Bring to a boil, then add bell pepper and pineapple chunks. Cook for 1-2 minutes or until thickened, then remove from heat.

  5. Assemble:
    Add the fried chicken pieces to the  hot sweet and sour sauce, stirring to coat all the pieces evenly. Transfer the coated chicken to a serving dish garnish with green onion & green chilies.
  6. serve:

     Jamaican sweet & sour chicken with pineapple is ready to serve over steamed white rice or fried rice. Garnish with chopped green onions or sesame seeds if desired.
