  1. Prepare Fruits

    To hull the strawberries, grab a small paring knife. Hold a strawberry by the stem and carefully insert the knife tip into the pointed end opposite the stem. Use a gentle sawing motion to remove the core, then repeat with all the strawberries. 

    prepare kiwi and peach:

    Wash and Place a kiwi on a flat surface and carefully cut off a thin slice from each end with a paring knife. Peel away the skin with knife or peeler.

    Peel the peach and remove pit:

    Rinse  and peel the peach, find the natural groove running down the side, this will be your cutting guide.

    Use a sharp knife to carefully cut the peach in half along the groove and remove the pit and cut in 4 wedges.

  2. Pat dry Fruits:
    Once you've prepped all your fruits (strawberries, kiwi, peaches, etc.) arrange them on a nice platter or tray. If there's any surface moisture on the fruit gently pat them with a clean paper towel.
  3. Whip Cream:
    Find a medium-sized metal or glass mixing bowl. Make sure the bowl is clean and dry! Even a little moisture can affect whipping cream. Nestle the metal mixing bowl on top of the larger bowl filled with ice water.  Pour your whipping cream into the metal mixing bowl.
  4. Add sweat touch:

    Beat the cream with an electric mixer on low speed at first. once the cream start foaming, add 2 tbsp of sugar and 1 tbsp lemon juice (optional)

  5. Beat until cream reaches stiff peaks:

    Keep beating until the cream reaches stiff peaks. This means that when you lift the beaters out of the cream, peaks form and hold their shape.

    Once the cream reaches stiff peaks,stopbeating. Overbeating can turn the cream into butter.

  6. Spread Cream on Slices:

    Place two slices of japanese milk bread (shokupan) on your work space, spread generous amount of cream on each slice. Than add your fruits.

     Imagine the sandwich cut in half. Picture the colors and shapes of the fruit slices you want to show off. Arrange some of your fruit slices vertically, lining them up along the imaginary cut line. This way, when you slice the sandwich, you'll get beautiful pops of color and interesting shapes in the center.

  7. Prepare sandwiches:

    Now cover the fruits with thick layer of remaining whipped cream and top with the bread slice to make fruit sandwich.

  8. Wrap the Sandwiches with Plastic Wrap:

    Place the sandwich in the center of the plastic wrap. Bring one long side of the plastic wrap up and over the top of the sandwich. Gently press down to secure it in place, but avoid squishing the sandwich.Cover the sandwich from all sides.

  9. Draw Cut Line:

    draw a line on the plastic wrap of each sandwich to mark your cut line with the attractive cross section or you can use a clean, food-safe toothpick to gently nudge a few slices of fruit right in the center, where you imagine the cut line would be. This will give you a visual cue when you cut without marking the wrap.

  10. Refrigerate:

    Put the sandwiches in tray gently compress them. Refrigerate them for about 1-2 hours or up to overnight).
