  1. Preheat your oven:

    Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.

  2. Combine dry ingredients:

    Combine all dry ingredient in a large bowl ( sugar, coconut / almond flour, dessiccated coconut and baking powder.

  3. Combine wet ingredients:

    Wisk eggs in separate bowl with melted coconut oil, butter and vanilla extracts.

  4. Prepare dough:

    Fold the egg mixture into the dry ingredients until well combined

                                                          or

     pulse the ingredients in a food processor with the mixing blade on medium speed until everything is just combined.

  5. Form cookies:

     Take a cookie scooper or spoon full of the dough, roll into a ball, flatten with spatula and form 14-16 cookies with this mixture.

  6. Bake for perfection:

    Bake for 18-20 minutes, or until the sides and top are golden brown.

  7. Let the cookies cool:

    Let cookies cool on the baking sheet for a few minutes to firm up before transferring them to a wire rack. This will help them keep their shape.
