Sweet Imli Chutney Recipe:

  1. Make the tamarind pulp:

    In a large bowl soak tamarind in 4 cups boiling water for 30 minutes.

    Once soaked,using your fingers,squeeze and squish to seperate pulp from seeds and fiber.Use a cup of more water to squeeze  out maximum pulp from tamarind fiber 

    Now strain the pulp using a colander place over an other bowl.Press down using spatualla or back of the spoon.You will be left with seeds and fibers,waste them.

    You can use store bought ready to use tamarind pulp for your convenience.

  2. Prepare chutney:

    Add strained pulp in a pan,put it on heat and bring it to boil.Add jaggery / sugar and spices.

    Bring the mixture to a boil, then reduce heat and simmer until it thickens to your desired consistency.

     

     

  3. Store the tamarind chutney:

    Let the chutney cool completely then store in airtight glass container or bottle in refrigerator up to a month.

  4. Serving Suggestions:
