RawMango Mojito

- 2lb raw mangoes - 2 cups sugar - 1 tsb roasted cumin powder - 1 tsp black salt - 1/2 tsp black pepper powder

For Raw Mango Concentrate:

Wash and peel the raw mangoes, remove the pit and chop.Add in 2 cups of water and cook for 10-15 minutes or until soften.

Prepare Raw Mango Concentrate:

Add the soften mangoes in blender and make smooth paste and keep a side.

Add 2 cups sugar in sauce pan with a cup of water cook on medium to high flame to get the one string consistency.

Add mango purree in hot sugar syrup, add spices (black salt, black pepper, roasted cumin powder) combine every thing together, boil and  remove from heat. let the mango concentrate cool, store in fridge  in a jar up to a week or 2.

LET'S MAKE MOJITO

RAW MANGO

– 2-3 raw mango concentrate – 150 ml club soda or sprite – 1-2 springs of fresh mint – 5-6 ice cubes – 1⁄2 black salt or pink Himaliyan salt  – 1 lemon juice – 1⁄4 inch piece of fresh ginger

–Add 4 ice cubes with raw mango concentrate – Season with black salt and mint leaves. – Add 1 tbsp lemon juice to the glass – Finally fill the glass with soda water – Stir well to combine the entire mixture. – Garnish with mint string & lemon slice.
